Its Summer Time!!! Nothing can beat the refreshing feeling you get when you take a sip from a chilled drink on a hot summer day!!…So the first thought that flashed in my mind when I wanted to make a soup was to make the chilled cucumber-mint soup. Last summer when I had tried this, it was a hit among our guests. I doubt if you can make a soup quicker than this one..
I have to confess that I got the idea from some site but tried it my way as the ingredients mentioned in that recipe were not in stock with me. So here goes the recipe…
Chilled Cucumber Mint Soup
Cucumber, peeled, cored and diced- 3 small
Onion finely chopped- 1 small
Mint finely chopped- 2 tbsp
Garlic finely chopped- 2
Fresh Curd- 1-1/4 cups
Salt- to taste
Pepper- to taste
Oil- 1 teaspoon
Heat a pan with oil and saute the onion till translucent. Switch off and let cool. Transfer all the ingredients including onions into a blender and blend for about 30 seconds. Check the seasoning.Transfer to a bowl and chill in the refrigerator. Garnish with mint leaves before serving…Enjoy!!!!
