The mere mention of the word “Chemmeen Ularthiyathu” would make any seafood crazy Keralite like me, drool. This has been one of my all time favourites since childhood. I vividly remember asking my Mom, from my boarding school before each vacation, for the Chemmeen Ularthiyathu to be prepared the day I reach home and as frequently as possible thereafter. Even after marriage, this ritual has not stopped, as my hubby is generally posted to places not having access to fresh prawns. I must confess that the real taste comes with fresh prawns only.
This dish can be consumed as a starter as well as a side dish. Moving on to the recipe…

Chemmeen Ularthiyathu (Stir fried Prawns with coconut slices)
Ingredients
Shelled, deveined prawns- 500 gms
Gambooge (Ingredient’s Gallery)- 2-3 (According to the quality)
Turmeric powder- 1/4 teaspoon
Kashmiri Chilli powder- 1/2 teaspoon (you can use normal chilli powder as well)
Coconut sliced and cut into bits- 1/2 cup
Curry leaves- 1 sprig
Water-1/4 cup
Salt to taste
For the stir fry
Oil- 2-3 tablespoons
Chopped onions- 1 cup
Kashmiri chilli powder- 1-2 teaspoons (adjust to suit your liking)
Turmeric powder- 1/4 teaspoon
Curry leaves- 2 sprigs
Method
Take water, gambooge, salt, sprig of curry leaves, turmeric powder and chilli powder in an earthen pot and keep on flame. Let the water boil so that the sourness of the gambooge blends in the water. Add the coconut bits and once the water reduces almost to half, add the prawns and mix well. No need to add extra water. Cover and cook till the water dries up. Tha prawns should be curled up and have a pink hue. Switch off the heat. Meanwhile heat another pan with oil. Add the curry leaves followed by Onion. Saute till the onions wilt. Add the chilli powder and turmeric powder and saute for a minute. Now add the cooked prawns and mix well. Lower the heat and let it cook, stirring in between till the prawns turn nearly reddish brown. Adding an extra tablespoon of oil will help it crisp up better. Switch off heat. Serve hot.
