Squid Thoran 1

 

Once we reached ISB, our first outing was to Hypercity in Inorbit Mall to check out grocery items. I was looking around checking out stuff, when D came running and said, “Mama, they have squid here.” The excitement of seeing Squid, his favourite was written all over his face. Needless to say, after a while, we were headed home with a packet of squid in our shopping bag. Squid thoran was the first idea that popped in my mind for the next day’s lunch.  (more…)

Fish curry

I was really missing fish back in Agra and tried to make the most of my vacation by making varieties of seafood dishes. One such dish was a simple fish curry using onions and tomatoes. The first time I was introduced to this preparation was by a good friend Mrs Gordon. I was indeed surprised to see that fish could be prepared in similar way as chicken masala. Mangalore Fish

Seafood…That was one of the must have’s in our list before heading home. Back in Agra, the chances of getting fresh fish of our choice was next to none. So, the trip to Kerala was double whammy. We get to meet our near and dear ones and eat seafood to our heart’s content. Another aspect for me was the fact that I get to prepare and put up some Fish recipes for my readers. :-) The moment I decided to cook, I knew what I wanted. Mangalore Fish. The other day while I was scanning through a lifestyle magazine I came across the name Prawn Baffad. The name itself sounds from outer space. A quick search and my thoughts were transferred to this coastal Indian city of Goa. You guessed it right!!! Its a Goan dish. Goa is famous, among other things, for its beaches and seafood. I am sure this dish will make you too a fan of Goan seafood.

The mere mention of the word “Chemmeen Ularthiyathu” would make any seafood crazy Keralite like me, drool. This has been one of my all time favourites since childhood. I vividly remember asking my Mom, from my boarding school before each vacation, for the  Chemmeen Ularthiyathu to be prepared the day I reach home and as frequently as possible thereafter. Even after marriage, this ritual has not stopped, as my hubby is generally posted to places not having access to fresh prawns. I must confess that the real taste comes with fresh prawns only.

Today I was feeling very adventurous and wanted to try out something really different from another part of the world. My search for this adventurous dish landed me on  Burmese Khow Suey. Although I have heard a lot about Burmese Khow Suey, I never got an opportunity to taste it till date. Burmese Khow Suey is a noodle dish consisting of coconut milk, meat and certain spices. It is a wholesome meal and is very similar to Curry Laksa, a Malaysian delicacy.

I have professed our love for seafood in my earlier post. During our recent trip to Kerala, we managed to get hold of some Crabs as well. Two things were on my mind at that time. One, our growling tummies and the second, you, my readers. Well..I had to put up one crab recipe at least. Had we not been so hardpressed for time, I would have cooked up more variety. As for this recipe, do I have to really explain how much we relished it??? I guess not.. :-) So here I am, sharing my Mom’s Crab recipe with you. (more…)

Our family is crazy about seafood in all forms. Whenever we go to Kerala, D has a long list of Seafood dishes he wishes to have. Among them Kakka Irachi or Clam Meat is one of his all time favourites. The best part is that once it is made, none of us have the patience to wait till meal time. At least half of it would have already reached its destination….. our stomachs. :-) (more…)

One of the must-do items during our trip home (Kerala) was to try out as many seafood dishes as possible. Though the list was exhaustive, we did manage to strike off quite a few from it. Topmost on the list was Prawn Cutlets aka Chemmeen Vada, an all time favourite of ours. No matter how much we have, we still yearn for more…. My Mom is well aware of this and prepares it in advance. Meen Pattichathu/Vattichathu is a spicy fish curry, a traditional Syrian Christian dish. This is fiery red curry which is hot as well as tangy. The trick involved in this dish is using Kashmiri red chilli powder, which is mild in heat but gives a bright red colour. A key ingredient of this dish is Gambooge, a tamarind variety, known as Kudampuli in Malayalam, which gives the tangy twist to it.  Ideally, this curry should be cooked in a claypot for best results.  (more…)

I was so engrossed with some work that I lost track of time. At one point, when I looked up at the clock I realised that it was almost lunch time and I haven’t made anything. After a quick look at my pantry, I decided on making Hakka Noodles. Hakka noodles is a simple stir fried noodles. It is more of an Indo-Chinese recipe. Indian Chinese cuisine is the adaptation of Chinese seasoning and cooking techniques to Indian tastes. (more…)
