Crispy sesame beef

It was during our Dubai trip that I tasted Crispy Fried Beef, for the first time, at a Chinese restaurant, ‘Nanking’. The beef was crunchy and the taste was amazing, unlike any beef preparation I had till then. I must confess that my favourite Chinese restaurant in India is the Nanking at Secunderabad and for a moment thought it to be part of the same chain, which it was not.

Vegetable Momos

Chicken Kathi Rolls 1

Coming up with something different as evening snacks, almost on a daily basis, when D comes back after his play is one of my constant worries during the day. The boy would be all tired n hungry and if I don’t put something worthwhile on the table, he might even eat me up. I am sure this dilemma is felt by many mothers around the world. Chicken Momos

Momo is a type of dumpling native to Nepal, Tibet, Bhutan, Sikkim and other Himalayan states of India. My first rendezvous with Momos was during our stay in Sikkim. It was another ‘Love at first bite’ for me. Though there are fried as well as steamed versions of Momos, my personal favourite is the steamed version. Shaping a Momo is an art in itself and it takes some experience to shape them beautifully. I just love watching those experts make Momos so deftly. Wish I were so quick !!! :-P

Fried Chicken liver chilli

During my college days, I used to stay in a hostel near our college in Mangalore. Sometimes on Sundays, a sudden plan would take shape in someones head, to eat out. The next moment, we all would be out of our rooms, ready to head to ‘Hao Hao’, our favourite hangout for Chinese cuisine. I used to love their Fried Chicken Liver Chilli. This dish was so tasty that some of my friends who were not very fond of Chicken liver, ultimately ended up being the first ones to dig into this dish, when served. (more…)

The other day I was racking my brain to prepare a snack item, using beef, that isn’t too spicy. All the preparations I knew of had generous amounts of spices. That’s when the conversation I had with my little sis came to my mind. One can find a lot of varieties of kabab, fish kabab being one of them. I am sure that all the seafood lovers like me, would love to get their hands on a plate of hot kababs. The fish kababs are pretty easy to make once they are deboned. Deboning fish for kababs is simple. All you have to do is dump them in a pot of salted boiling water and cook till they are done. Drain and start deboning..Easy peasy right?? :-) You can reserve the stock for any recipe that calls for fish stock.

One can find a lot of varieties of fried fish as we move from one country to another. The fish fry I grew up eating was very simple to make. Take any fish of your choice. Marinate them in a chilli-turmeric-salt mixture and fry them up. As simple as that.. :-) This is a typical Kerala style preparation. However, one can find a lot of variations in the marination. The story goes that Galawati Kabab, an Awadhi delicacy, was developed for an aging Nawab who couldn’t chew, as he had lost his teeth. The word Galwati means ‘melt in mouth’. I still remember the day, while at college, when one of our friends brought sausages in her tiffin box for lunch. Being a hosteler, getting to taste sausages was a rare occasion, one would not like to miss. So the moment we got wind of the sausages, we dug in shamelessly without even bothering whether our friend was left with any. The tiffin box was empty in a matter of seconds.
