Here’s the recipe of Aloo Capsicum, a dry dish that goes well with Rice as well as Roti. This dish is pretty easy to make.

Instructions
  1. Heat oil in a pan.
  2. Add the onions and saute till they turn light brown.
  3. Add the ginger paste and stir for a few seconds.
  4. Add the coriander powder, chilli powder and turmeric powder and stir for 30 seconds.
  5. Add the diced potatoes, capsicum and salt and mix well.
  6. Cover and cook on low heat till the vegetables are cooked through.
  7. Sprinkle the garam masala powder and mix well.
  8. Switch off heat.
  9. Garnish and serve hot with Rice or Roti.

    No I didn’t Boil the potatoes. I put both together. Still the capsicum didnt turn mushy. You could add the capsicum a bit later also, if you want.

    I prefer homemade pastes than store bought ones… Vaangunnathil oru synthetic taste ullathupoley thonnaarundu… For homemade ginger/garlic paste just grind appx. 250 gms of ginger/garlic with a bit of salt and store in the refrigerator…Hope this helps πŸ™‚

    Simple and delicious.. i love homemade style recipes and this fits right in. I boiled the potatoes beforehand.. helped to get the perfect mushiness for the capsicums.
