Bread Pizza in a Pan

It was one of those days when I got so busy with some work, that I lost track of time. By the time I realised that I hadn’t prepared any snacks for D, the clock struck 4. With just about 20 minutes in hand, I took a quick look into the refrigerator. Bread, Mozzarella cheese, Veggies, Szechuan sauce….Phew !! I am saved. Without wasting any time I set about chopping sauteing etc. Finally the bread slices were sitting pretty with the colourful topping, all set to get into the oven…and I realised..No Electricity.. My heart skipped a beat. But not to be deterred, I decided to use the grill pan. Just as I was taking the pizzas off the pan, D makes his grand entry..Perfect Timing !!!

Ideally it’s better to use bread that’s a day old. You can use any topping of your choice. Here’s presenting an easy peasy snack item that can be whipped up in no time 🙂

Instructions
  1. Trim the edges of the bread slices and keep aside
  2. Heat oil in a pan.
  3. Add the chopped onions and saute till they turn pink and translucent.
  4. Tip in rest of the ingredients and saute for 2 minutes.
  5. Add the szechuan paste, if using, and tomato sauce and mix well.
  6. Check and adjust the seasoning.
  7. Switch off heat.
  8. Take the bread slices and place spoonfuls of the mixture over each slice.
  9. Evenly spread the mixture and sprinkle the grated cheese on top.
  10. Heat a grill pan or tawa on low flame.
  11. Place the pizzas on it.
  12. Cover and cook for 7 minutes or more, till the cheese melts.
  13. If you want crunchier base, cook longer.
  14. Serve hot.
