The other day, I was watching TV and saw an ad on Yummies Corn and Cheese nuggets. That set my brain into work. This is something I should give a shot at. As luck would have it, I chanced upon this snack at a party. Now that I know what it should taste like, I thought of trying it. My only concern was whether it would hold shape, as cheese melts when heated. That’s a chance I had to take. What is the worst that could happen? I won’t have any snack to give to D.. But then my pack of ready-to-make soup is there as a back-up. 😉 Anyway, I mixed up all the ingredients….Now was the actual test… Taking a deep breath, I put the first nugget into the hot oil and waited..Voila !!! Success !!! 🙂 It turned out beautiful..I fried up all the nuggets and presented to my boys… J is particular about avoiding oily food. So he took one and said “That will do.” I gave the rest to D.. After a while J asked me for one more…Yay!!! That says it all…I am so happy.. 🙂 Now let’s get on with the recipe 🙂

Cheesy Corn Nuggets
Ingredients
- 3/4 cup Processed grated cheese
- 1/2 teaspoon Garlic cloves paste
- 1/4 teaspoon Green chilli paste
- to taste Salt
- 2 tablespoons Corn flour
- 1/4 cup Sweet corn (you can use whole or slightly squished)
For Coating
- 3 tablespoons Flour
- Water (Enough to make a medium-thin batter)
- Breadcrumbs for coating
Instructions
- In a bowl, mix the grated cheese, garlic, chilli paste, salt, corn flour and corn and mix well to form a soft dough.
- Make small balls and flatten them into desired shapes.
- Meanwhile, in a bowl mix the flour and water to form a medium-thick batter.
- Dip each nugget into the batter and roll on the breadcrumbs so that each nugget is evenly coated.
- Heat oil and drop the nuggets into the hot oil.
- Take out when they turn golden brown and place on absorbant paper.
