Chicken Liver Pepper Fry

D’s fondness for certain dishes keep fluctuating. There was one time when he used to like Chicken liver. Then came a phase when he wasn’t particularly fond of it. Lately, he has switched back to liking it. This time, when he asked me to prepare, I thought of making something different following some random recipe on the net. Alas!! It was a flop. “Mom, next time,please make it like you always used to make.I love that preparation only” is what he said.
Usually, I end up going a little bit of this, a little bit of that- mode when I prepare. This time around, I decided to note it down so that I prepare the exact same way he likes. The boys loved it, as usual.
This dish can be served as a starter as well as a side dish. You can adjust the pepper powder to suit your liking. Also, make sure not to stir the liver too much as they will break.

Chicken Liver Pepper Fry
Ingredients
- 3 tablespoons Oil
- 2 sprigs Curry leaves
- 1 medium size Chopped onion
- 2 teaspoons Ginger-garlic paste
- 2 teaspoons Coriander powder
- 1 teaspoon Chilli powder
- 1-1/2 teaspoons Black pepper powder
- 1/2 teaspoon Fennel powder
- 1/2 teaspoon Turmeric powder
- 500 gms Chicken Liver
- to taste Salt
Instructions
- Heat pan on medium
- Add 3 tablespoons oil
- When the oil is hot, add curry leaves
- Add the chopped onion and cook till light brown in colour
- Add the ginger-garlic paste and cook till raw smell goes.
- Add coriander powder and stir for a few seconds
- Add the chilli powder, fennel powder, pepper powder and turmeric powder and mix well. Cook for a few seconds
- Add the liver and mix well. Do NOT over mix. Else the liver pieces will break.
- Cover and cook for 5 minutes. Give a stir in between.
- Add salt and mix well.
- Let cook for another 5 minutes.
- Switch off heat and serve hot
