Coorg Kadumbuttu/Kadambuttu (Steamed Rice Balls)

Kadumbuttu is one of the most popular dishes of Coorg. The best accompaniment for Kadumbuttu is the much famous Pandi Curry, which is a spicy, tangy, flavourful Pork curry.
Thari or coarsely ground rice is the main ingredient used to prepare the dish. If you cannot find broken raw rice at your nearby grocers, do not fret. Take any raw white rice and soak for 30 minutes or till it becomes soft. Drain the water and spread on a paper or cloth. Once the moisture has gone, you can grind them coarsely and use.
Instructions
- Here's a picture of broken rice.
- Rinse the rice 2-3 times.
- Take the rinsed rice, water, salt, butter and grated coconut in a pan.
- Cook on medium heat, stirring continuously, till the entire mixture turns mushy.
- Switch off heat and cover the pan for 5 minutes.
- Apply butter on your palms. You may use water also instead.
- Take about 3/4 tablespoon of the rice mixture and form small balls.
- Place the rolled balls on a muslin cloth, placed on a steamer.
- Once the surface is filled, you may place a layer of muslin cloth over the balls and place the remaining balls on it.
- Cover the top with another layer of muslin cloth.
- Cover this with a lid and steam the balls on medium heat for 20 minutes or till done.
- To check if the balls are cooked, you may poke with a knife. It is cooked if the knife comes out clean.
- Serve the kadumbuttu with Pandi Curry or any accompaniment of your choice.

Hi Albert, The purpose of using the cloth is to avoid the balls from sticking to each other. You may use any clean, thin cloth.

hi, isnt the water a little too much … because i double the qty of water when i make, and turns out fine..
