  1. Cut the potatoes into 1/4" thick strips. Wash them thoroughly in water multiple times till the water runs clear. Drain the potatoes and put in ice cold water, along with a tablespoon of lime juice and a teaspoon of salt. Place this in the refrigerator for about 30 minutes. Take out the potatoes and drain them and dry them well with a kitchen towel.
  2. Meanwhile heat oil in a pan over medium heat. Check the temperature by putting a piece of the potato. If it bubbles away and comes to the surface intstantly, the oil is ready.
  3. Drop a small batch of the strips carefully into the oil. Make sure it isn't overcrowded. Also do not stir till the potatoes start turning yellow in colour.
  4. Once it turns golden, drain them onto an absorbent paper.
  5. If you plan to store them, let cool and transfer to an airtight container and refrigerate.
  6. If using right away, let cool till it becomes room temperature. Heat the oil again.
  7. When hot, add the fried potatoes into it and cook till it turns golden brown in colour. This process won't take long. Drain onto absorbent paper and serve hot immediately.
  8. Note: If you feel that it is less salty, dump all the fries into a bowl. Sprinkle salt over the fries and toss it well. You can add pepper and other flavourings as well.

    Hi,
Please, read the sentence prior to it. “If using right away, let cool till it becomes room temperature. “.

As for the refrigerated, you need to thaw them n bring to room temperature before frying again.

    Hope your doubts are clarified.
