Ingredients
- 3 Potatoes
Instructions
- Cut the potatoes into 1/4" thick strips. Wash them thoroughly in water multiple times till the water runs clear. Drain the potatoes and put in ice cold water, along with a tablespoon of lime juice and a teaspoon of salt. Place this in the refrigerator for about 30 minutes. Take out the potatoes and drain them and dry them well with a kitchen towel.
- Meanwhile heat oil in a pan over medium heat. Check the temperature by putting a piece of the potato. If it bubbles away and comes to the surface intstantly, the oil is ready.
- Drop a small batch of the strips carefully into the oil. Make sure it isn't overcrowded. Also do not stir till the potatoes start turning yellow in colour.
- Once it turns golden, drain them onto an absorbent paper.
- If you plan to store them, let cool and transfer to an airtight container and refrigerate.
- If using right away, let cool till it becomes room temperature. Heat the oil again.
- When hot, add the fried potatoes into it and cook till it turns golden brown in colour. This process won't take long. Drain onto absorbent paper and serve hot immediately.
- Note: If you feel that it is less salty, dump all the fries into a bowl. Sprinkle salt over the fries and toss it well. You can add pepper and other flavourings as well.
