Crispy Okra with Peanuts and Cashewnuts

Ingredients
- 250 gms Okra Lady ' s finger / cut into small roundels
- 1 onion Chopped
- - 5 cloves garlic Crushed
- 1 sprig Curry leaves
- handful Peanuts - a
- 1 tablespoon Cashewnuts
- 3/4 teaspoon Chilli powder
- 1/4 teaspoon Turmeric powder
- 1/2 teaspoon mango powder Dry (amchoor powder)
- to taste Salt
Instructions
- Roast the peanuts and cashewnuts and keep aside.
- Heat oil in a pan. When hot, deep fry the okra roundls till crispy. Drain to an absorbent paper. Keep aside.
- Take two tablespoons oil and put into another pan. Saute the onions till they wilt. Add the curry leaves and crushed garlic and saute for a minute.
- Add the chilli, turmeric and dry mango powder and fry for a few seconds.
- Add the okra, salt, peanuts and cashewnuts and toss well.
- Switch off heat and serve hot.
