Instructions
  1. Grind the shallots, garlic, ginger and green chilli to a coarse paste. Keep aside.
  2. Remove the skin of the duck if you wish.
  3. Marinate the duck pieces with salt, pepper powder and turmeric powder and keep aside for at least 30 minutes.
  4. Mix the coriander powder, chilli powder, turmeric powder and pepper powder with a little water to form a paste. Keep aside.
  5. Heat oil in a pan.
  6. Add the curry leaves followed by the shallot paste.
  7. Saute till brown in colour.
  8. Add the coriander- chilli paste and saute for a minute.
  9. Add the duck pieces, vinegar and hot water and mix well.
  10. Cover and cook on low heat till the duck is cooked through.
  11. Add the garam masala powder and stir well.
  12. Serve hot.
  13. Garnishing with some fried potato juliennes will enhance the taste.

    It was Amazing ! This is the only recipe I use for Duck roast cause its BOMB!
