Duck Roast- Kerala Style


  • 1 kg Duck
  • to taste Salt
  • 1/2 teaspoon Turmeric powder powder
  • 1/2 teaspoon Pepper powder powder

To be Ground coarsely

  • 3/4 cup shallots
  • 1 Ginger " - piece
  • 16 cloves Garlic cloves
  • 1 Green chilli
  • 2 sprigs Curry leaves
  • 1 teaspoon Chilli powder
  • 1/2 teaspoon Pepper powder powder
  • 2 tablespoons Coriander powder powder
  • 1/2 teaspoon Turmeric powder powder
  • 1 tablespoon Vinegar
  • 1 teaspoon Garam masala powder
  • 1/4 cup Hot water


  • Grind the shallots, garlic, ginger and green chilli to a coarse paste. Keep aside.
  • Remove the skin of the duck if you wish.
  • Marinate the duck pieces with salt, pepper powder and turmeric powder and keep aside for at least 30 minutes.
  • Mix the coriander powder, chilli powder, turmeric powder and pepper powder with a little water to form a paste. Keep aside.
  • Heat oil in a pan.
  • Add the curry leaves followed by the shallot paste.
  • Saute till brown in colour.
  • Add the coriander- chilli paste and saute for a minute.
  • Add the duck pieces, vinegar and hot water and mix well.
  • Cover and cook on low heat till the duck is cooked through.
  • Add the garam masala powder and stir well.
  • Serve hot.
  • Garnishing with some fried potato juliennes will enhance the taste.
