As a child, I wasn’t particularly fond of pork dishes because I used to dislike the fat. This continued till I went to college. During my studies in Mangalore, I used to visit my aunt during weekends. During one such visit, a pork curry was prepared. I was a bit hesitant to have it but still went ahead and tasted it. To my utter surprise, not only did it taste so good, I ended up devouring even the fatty portions as well. That was the end to my dislike for Pork.

Getting reliable pork meat was always a challenge and hence I would buy only from sources which are recommended by people known to me. Now that we have comfortably settled in, it was high time I zeroed in on reliable vendors in Bangalore. On contacting Kalyan, a friend of mine, not only did he give the address, he offered to buy me some pork as he was heading to the shop himself. Aah !! The blessings of having wonderful friends around you. 🙂 As I had already prepared Bafat Powder, I was all set to prepare Dukra Maas. My parents LOVED it and I was reliving the good ol’ days. I followed the recipe from The Tiffin Box. Ideally prepare this dish a day ahead so that by the time you serve the meat would have absorbed all flavours.

  1. Marinate the pork with rest of the ingredients.
  2. Let it rest for at least an hour. The more, the better.
  3. Cover and cook the pork on low heat, till it is tender and the fat starts floating on top.
  4. Adjust the seasoning to suit your taste.
  5. Switch off heat.
  6. Serve with Roti, Rice or Sannas.
  7. I didn't add any water. But if you wish, you could add water while the pork is cooking.
