Just as was racking my brains as to what to prepare for Dinner, D came by and asked if I could make some Pizza Dough. On enquiring, he said he wanted to make Pizza Pot Pie. Though this has been in my to-do list, I had completely forgotten about it. On searching, found a pretty easy recipe at Food Network.
The Pies turned out to be a wholesome meal, though D felt it needed MORE cheese. 🙂 You can prepare the pizza dough by following this recipe. You will require only half the quantity of pizza dough for this recipe.

Easy Pizza Pot Pie

Pizza Pot Pie is an easy to prepare One Pot Dish.

Ingredients
  

For the Tomato Sauce

  • 1 tablespoon Olive oil
  • 3 Chopped tomatoes
  • 1 clove Minced Garlic
  • 1/2 teaspoon Finely chopped Rosemary
  • 25 grams Pancetta/ Salami Chopped
  • to taste Salt
  • as required Pepper powder

For the Pot Pies

  • 1 Cup Roasted Chicken chopped
  • 1 Cup Broccoli diced
  • 1 Cup Grated Mozzarella Cheese (or more)
  • to taste Salt
  • as required Pepper powder
  • 1/2 quantity Pizza dough
  • 2 tablespoons Olive oil
  • 1 tablespoon Grated Parmesan Cheese
  • 3 10 ounce Ramekins

Instructions
 

  • For the Tomato Sauce
  • Heat oil in a pan.
  • Add the minced garlic, rosemary and chopped pancetta/Salami.
  • Cook till the salami turns brown in colour.
  • Add the chopped/ pulsed tomatoes.
  • Simmer on low heat for 15 minutes.
  • Add salt and pepper powder and mix well.

For the Pot Pies

  • Preheat oven at 200C.
  • Take a bowl.
  • Add the chicken, broccoli, tomato sauce and mozzarella cheese.
  • Mix well.
  • Fill the ramekins with the mixture, evenly.
  • Roll out Pizza dough to a round, an inch bigger than the ramekins.
  • Carefully place each pizza dough round on top the ramekins and seal along the side.
  • Brush the dough with Olive oil.
  • Sprinkle the parmesan cheese on top.
  • Make a slit over the dough, using a paring knife.
  • Bake in the oven for 25 minutes or till golden brown on top.
  • Serve warm as it is or you may invert the ramekins onto a plate and slide away the ramekins.
