Flapjacks are sweet snack bars made with rolled oats, honey etc. I was looking for a recipe to use up the overripe bananas lying in the pantry. I was very pleased with the recipe as this was a healthier option to fulfil my craving for something sweet. After all, I am on a weight loss mission.

  1. Preheat oven to 160C. Grease and line a 20cm square tin with baking parchment.
  2. Peel and grate the apple. Mash the bananas. Keep both aside.
  3. Heat the butter, peanut butter and honey or maple syrup in a small pan until melted. Add the mashed banana, apple and water, and mix to combine.
  4. Take a large bowl and tip the oats, the dried fruit and the seeds into it. Pour in the combined banana and apple and stir until everything is coated by the wet mixture. Tip into the cake tin and level the surface.
  5. Bake for 55 mins until golden. Leave to cool in the tin.
  6. Cut into 12 pieces (while warm) to serve or store in an airtight container in the fridge. They will keep for up to 3 days.
