Grilled Chicken with Basil Dressing

J was away on official trip for the last few days. Whenever he’s away, the food he craves for is the Rice, Pineapple Pulissery, Payar Ularthiyathu and Fish fry combination. This combination happens to be a favourite of mine too. Unfortunately, D doesn’t enjoy this as much as we do. After putting up with the traditional fare without complaints for two days, he requested for a change 🙂 “Mom, can you make something else please? Maybe Griilled Chicken? ”  Wow! That’s exactly what I had in my mind. I had just stocked my refrigerator with some fresh chicken breasts and a bunch of basil leaves, The timing of his request couldn’t have been more perfect. 🙂 

In our home, no grilled chicken meal is complete without steamed veggies and Mashed potatoes. Having made that and set aside, now was the time to deal with the Hero of the meal, the Grilled Chicken. I had already bookmarked a recipe from Food Network, for my kitchen experiment. With all the ingredients in stock, all I had to do was set about making the dish. The result ?? My boys wiped their plates clean. That pretty much sums it up, right?

Grilled Chicken with Basil Dressing

An easy to make Grilled Chicken with a finger-licking basil dressing.

Servings 6 servings


For the Chicken

  • 6 pieces Chicken Breasts
  • 1/3 cup Olive oil Extra virgin
  • 3 tablespoons Lemon juice
  • 1-1/2 teaspoons Crushed Fennel Seeds
  • 3/4 teaspoon Salt
  • 1/2 teaspoon Pepper powder

For the Basil Dressing

  • 1 cup Basil leaves lightly packed
  • 2-3 Garlic cloves
  • 1/3 cup Olive oil Extra virgin
  • 3 tablespoons Lemon juice (adjust to taste)
  • to taste Salt
  • 1/2 teaspoon Pepper powder


Grilled Chicken

  • Score the chicken breasts and keep aside.
  • Take the oil, lemon juice, fennel powder, salt and pepper powder in a bowl.
  • Whisk well to blend.
  • Apply marinade on all the chicken pieces and refrigerate for at least 30 minutes.
  • Heat a grill pan on medium high heat.
  • Apply oil on the pan.
  • Place the marinated chicken and cook till brown on one side.
  • Flip the pieces and cook till brown in colour.
  • Once cooked through, transfer the pieces to a plate.

For the Basil Dressing

  • Grind the basil leaves and garlic cloves to a smooth paste.
  • Add the oil, lemon juice, salt and pepper powder and blitz for a few seconds, till well blended.
  • Transfer the chicken pieces onto serving plates and drizzle the basil dressing on top. Serve immediately.
