Oru doubt… Doesnt Lime juice serve as a preservative or does it just brings out the flavor of it? Is it okay if I use reconstituted lime juice? Or can i make without it… πŸ™‚

  19. Mareena Jerrish says:

Lime juice is added to avoid discolouration as well as an extra zing to it. I guess reconstituted juice should work fine. As for not using at all, I guess that’s a chance you have to take as I have never tried. πŸ™‚

Hi Mareena, I have never tasted or heard of a banana jam till date.Would love to try out your recipe for a smaller portion. Is it okay to skip the artificial food colour (or maybe put very little grated beet for a slight colour during the cooking stage)? Also is it okay to substitute sugar with jaggery? Look forward to your reply. Thank you! πŸ™‚

    Hi Kalyani.

Sorry for the delay in replying. Hadn’t seen this message. Skipping artificial colour is perfectly fine. Yes you can use Jaggery as well.. Make it in a liquid from and strain before adding it..
