Even though Ihaven’tfaced any problems till date, I consider the point very valid and the concerns genuine. So, I am sharing the recipe of Mayonnaise using cooked eggs, which I prepared for a party at home. The photos and the video make the process self explanatory

Homemade Mayonnaise using Cooked Egg
After going through the recipe of mayonnaise in my blog, a few of my readers had voiced their concerns about salmonella poisoning, as raw eggs were used. Ingredients
- 3 Egg yolks
- 1 - 1/2 tablespoons Lime juice
- 3 tablespoons Water
- 2 teaspoons Sugar (or more)
- 1 - 1/2 teaspoons Mustard powder
- to taste Salt
- 1 teaspoon Pepper powder
Instructions
- Put the egg yolks, water, sugar and lime juice in a pan. Heat on low heat, stirring continuously with the spatula. As soon as it starts to thicken, take off the heat. Place the pan in a bigger utensil containing cold water to avoid further cooking of the mixture. Whisk the mixture well and keep aside to cool.
- Add the mustard powder, pepper powder and salt. Beat the mixture using electric beaters. Slowly drizzle the oil while continuing to beat. Do NOT add the oil in one go. Drizzling the oil is of great importance or else the mixture will curdle. You can see the video given below to understand the technique of adding oil.
- Beat the mixture till you finish the last drop of oil. Taste the mayonnaise to see if it is balanced. Personally, I prefer to have a sweeter mayonnaise. You can add sugar, salt or lime juice to suit your taste. Transfer to a dryairtight container and store in a refrigerator.

Note
You can make mayonnaise in a blender as well. But make sure you drizzle the oil as seen in the video.
