Honey Chilli Potato

Honey Chilli Potato is one of D’s favourite snacks. We had tried the dish at a nearby restaurant and loved it. Couple of days later, D requested me to make them at home. He was confident that I would be able to pull it off. Keeping my apprehensions aside, I gave it a shot, which proved fruitful.
You can prepare this recipe either by using the double fried method or like the one given below. I opted for the second method to avoid double frying.

Ingredients
- 3 Potatoes
For the Coating
- 1 teaspoon Garlic paste
- 1/2 teaspoon- 1 teaspoon Chilli powder
- 1/2 tablespoon Honey
- 2 - 1/2 tablespoons Tomato sauce
- to taste Salt
Instructions
- Cut the potatoes into 1/4u2033 thick strips.
- Wash them thoroughly in water multiple times till the water runs clear.
- Add a little bit of salt and water and cook till the potato fingers are cooked just right.
- Make sure that they are cooked but firm.
- Drain the cooked potato.
- Carefully place on an absorbent paper/towel to remove the moisture.
- Heat oil in a pan.
- Add a small bath of the potato fingers into the hot oil.
- Make sure it isnu2019t overcrowded.
- Also do not stir till the potatoes start turning yellow in colour.
- Once they turn golden brown and crisp, drain them onto an absorbent paper.
- Heat a pan. Pour a tablespoon of oil into it.
- Add garlic paste and saute till the raw smell goes.
- Add the chilli powder and stir for a few seconds. Add the honey and tomato sauce and stir for 5 seconds.
- Add the fried potato fingers and toss quickly till the sauce coats the potato fingers evenly.
- Adjust the seasoning. Serve hot.
