Idiyappam also known as String hoppers, is a popular breakfast item in Kerala. While some people choose to have the sweetened version, some like it with spicy curries. Back in the old days, rice used to be soaked and dried and ground to a fine powder. It was then roasted and lightly and stored in big containers and used as and when needed. Nowadays easy availablility of readymade Idiyappam flour has made things much easier. At home, D always prefers the sweet version, using sweetened coconut milk as accompaniment for the Idiyappam.

I am sharing the recipe of Idiyappam, along with the sweetened version. This recipe yields about 10-12 Idiyappams.

Instructions
  1. Mix the sugar and grated coconut together and keep aside.
  2. Dissolve the sugar in the coconut milk and water and keep aside.
  3. Put the rice flour in a bowl and make a well in the centre.
  4. Take water in a pan. Add the salt and oil/ghee.
  5. Bring the water to a rolling boil. Switch off heat.
  6. Pour the boiling water into the well. Mix the flour with water well with a spatula or spoon till well blended and you get a soft dough.
  7. Cover and keep aside. .
  8. Meanwhile grease Idli trays with oil or ghee.
  9. Take some dough and put into the press. .
  10. Press the dough into the Idli trays in a circular motion so that it is evenly spread. If making the sweet version, sprinkle the sugar- coconut mixture on top as seen in the picture below. .
  11. Steam cook for 10-15 minutes till all are cooked through.
  12. Serve hot with sweetened coconut milk or any curry of your choice.
