Karaikudi Chicken Stir Fry

 

 

Couple of weeks back, we had visited a restaurant where we were served Karaikudi Kozhi Masala 65 as a starter. We enjoyed the dish so much that I had made up my mind to recreate the dish at the next opportunity. The first step towards the goal was to search for the recipe, but in vain. Not being a person who would give up that easily, I searched till I stumbled upon the recipe of Karaikudi Masala Powder. Hmm… I could start from there right? Soon after making the powder I went about with my experiment. The result? Lipsmacking !! The boys loved it.

Karaikudi Chicken Stir Fry

Couple of weeks back, we had visited a restaurant where we were served Karaikudi Kozhi Masala 65 as a starter. We enjoyed the dish so much that I had made up my mind to recreate the dish at the next opportunity.

Ingredients
  

  • 800 gms Chicken
  • 1 teaspoon + 1 teaspoon Karaikudi Masala powder
  • 1 teaspoon Ginger paste
  • 1 teaspoon Garlic paste
  • to taste Salt
  • a few Curry leaves
  • 2 Chopped onion
  • 1 teaspoon Chilli powder
  • 1 teaspoon Pepper powder
  • 1/4 teaspoon Turmeric powder
  • 2 sprigs Curry leaves

Instructions
 

  • Mix Chicken with salt, 1 teaspoon Karaikudi masala powder, ginger paste, garlic paste and few curry leaves.
  • Cover and cook till the chicken is cooked through.
  • Keep aside.
  • Heat 2 tablespoons oil in a pan.
  • Add the curry leaves and chopped onion.
  • Saute till the onion is light brown in colour.
  • Add chilli powder, pepper powder, turmeric powder and karaikudi masala powder and stir for a minute.
  • Add the cooked chicken, along with liquid, if any, into it and mix well.
  • Cook till all the moisture dries up and the masala coats the chicken pieces well.
  • Switch off heat and transfer to a serving plate.
