Last week, we had attended a function, wherein we had tiffin meals. All the items served there was new to me as it was a typical Tamil feast. The first item served was a sweet. On enquiring with my friends, I was told that it is Kasi Halwa. I loved the taste so much that I had made up my mind to try this one at home at the earliest chance. More so, as it is a very easy to prepare dessert.
The recipe yields about a bowlful of Halwa, as seen in the picture.

Kasi Halwa (Ash Gourd/Winter melon Halwa)

Ingredients
- 250 gms Ash gourd Winter melon
- 125 gms Sugar or less
- 1 - 1/2 tablespoons Clarified Butter /Ghee
- 1/4 teaspoon Cardamom powder
- a pinch Salt (Optional)
- a pinch Orange colour (you could use any colour)
- 4 - 5 Cashewnuts (Optional)
Instructions
- Fry the cashewnuts in clarified butter (1 teaspoon) till golden brown. Drain and keep aside.
- Grate the ash gourd and tip into a pan along with ghee.
- When it starts to release its juices, add the sugar, colour and cardamom powder.
- Cook on medium heat till the water is absorbed and becomes glossy and thick. The consistency we are looking for is a softer version of Jam.
- Switch off heat.
- Garnish with fried cashewnuts and serve.
