I love Mediterranean desserts like Baklava, Kunafah, Kataifi etc. There was a time when I used to crave for Kunafah, especially after seeing pictures of it on social media. Unfortunately there weren’t any good places to buy them from. Even though I wanted to prepare them at home, getting the Kataifi dough was impossible and I gave up the thought of making at home. Once I happened to see a Turkish video, wherein they were making Kataifi dough using machine. The process looked simple. My next search was for a way to prepare at home. A long search led me to Korena in the Kitchen.

As I was trying out for the first time, decided to halve the recipe. Though the recipe is pretty simple, the process is a bit time consuming. Even though I was pleased with the result, I wanted to make sure I was on the right track. So I went ahead and made Kataifi. I was relieved only when the boys gave their seal of approval. Kataifi Dough

Prep Time 10 mins
Cook Time 30 mins
Total Time 40 mins
Servings 240 grams

Ingredients
  

  • 110 gms Flour / Maida
  • 80 gms Corn flour
  • 1/2 teaspoon Salt
  • 1 tablespoon Vegetable oil
  • 220 ml Water

Instructions
 

  • Add all ingredients to a bowl
  • Mix well to form a smooth, lump-free batter
  • Transfer the batter into a piping bag. Secure the end to stop the batter from flowing out.
  • Heat pan on medium heat
  • Smear oil on the pan
  • Wipe off excess oil
  • Pipe the batter onto the pan. Move your hand fast so that the batter forms thin lines
  • Let cook for a few seconds
  • Once the strands lift off the pan by itself, remove from the pan.
  • Repeat till the batter is used up.
  • Store in a zip-lock bag and freeze. Use when needed
