There are a lot of variations to marinating the fish before frying. Here is a favourite of ours.

Kerala Style Fish Fry
There are a lot of variations to marinating the fish before frying. Kerala Style Fish Fry is one of our favourites.
Ingredients
- 6 Mackerel
For the Marinade
- 1 Small Onion (or shallots 7-8)
- 5-6 cloves Garlic
- to taste Salt
- 1 teaspoon Chilli powder
- 1/2 teaspoon Peppercorns
- 1/2 teaspoon Turmeric powder powder
- 1 sprig Curry leaves
- 1/2 teaspoon Vinegar
Instructions
- Clean and score the fish on either sides.
- Put the shallots, garlic, pepper, chilli powder, turmeric powder, salt, vinegar and curry leaves into a grinder.
- Grind to a smooth fine paste.
- Apply well all over the fish and keep aside for at least 30 minutes.
- Heat oil in a pan.
- When the oil is hot, carefully place the fish and fry till the side is brown (low flame).
- Flip the fish and fry till brown in colour.
- Serve hot.
