There are a lot of variations to marinating the fish before frying. Here is a favourite of ours.

There are a lot of variations to marinating the fish before frying. Kerala Style Fish Fry is one of our favourites.

Instructions
  1. Clean and score the fish on either sides.
  2. Put the shallots, garlic, pepper, chilli powder, turmeric powder, salt, vinegar and curry leaves into a grinder.
  3. Grind to a smooth fine paste.
  4. Apply well all over the fish and keep aside for at least 30 minutes.
  5. Heat oil in a pan.
  6. When the oil is hot, carefully place the fish and fry till the side is brown (low flame).
  7. Flip the fish and fry till brown in colour.
  8. Serve hot.
