Koorkka- Thengakothittu Ularthiyathu (Stir fried Chinese Potatoes with Coconut Bits)

The first thought that comes in my mind on mentioning the word Koorkka, also known as Chinese Potatoes, is my childhood. This tuber was cultivated in the backyard of my Dad’s house. This tuber has a distinct fragrance and supposedly has medicinal values. Once the yield is taken, Koorkka was prepared so often. One day it would be plain stir fry. Another day it would be cooked with Beef.. Oh !! What variations ? No matter how the preparation was, it was devoured by every member of the family. I am sharing the basic preparation here.

  1. Here is a picture of Chinese Potatoes.
  2. Crush the shallots and garlic and keep aside.
  3. There are few ways to clean the chinese potatoes.
  4. One way is to take all the potatoes in a jute sack. Gather and hold the end of the sack together. Beat it on the ground till the skin peels off completely. The remaining skin be scraped off using a knife.
  5. Another way is to soak the potatoes in water. Scrub them on a stone.
  6. Or your could do what I did.
  7. Soak the chinese potatoes in water for 15 minutes. Drain off the water, leaving a little bit water in the vessel.
  8. Using the hands, move the chinese potatoes in the vessel, in a circular motion. You will see the skin peeling off. Continue doing so till you the potatoes are clean.
  9. Rinse the potatoes very well and cut them in desired size.
  10. Tranfer to a pan. Add the coconut bits, salt, turmeric and enough water.
  11. Cover and cook till it is cooked through.
  12. Heat oil in a pan.
  13. Add the crushed shallots, garlic and curry leaves.
  14. Stir for a minute and add chilli powder and turmeric powder. Mix well.
  15. Add the cooked chinese potatoes and stir well.
  16. Allow to cook for a minute or two.
  17. Serve hot with Rice.
Recipe Notes

Another Tip For Cleaning : Wash the Chinese potatoes till all the mud is gone and put it in a cooker. Add water and wait for 1 or 2 whistles depending on the size of the koorka. The skin comes out very easily.
