Mayonnaise (With Egg)

Given a choice, I would prefer to use homemade ingredients to store-bought ones. Mayonnaise is one such ingredient that I have been making at home for quite some time now. Initially I found the process a bit tricky, but trust me, once I got the hang of it, it became a cake walk. All that is required is to strictly follow the method without any deviations.

Next time before thinking of buying a jar of mayonnaise, how about trying to make it at home???

Mayonnaise (With Egg)

Given a choice, I would prefer to use homemade ingredients to store-bought ones. Mayonnaise is one such ingredient that I have been making at home for quite some time now. Initially I found the process a bit tricky, but trust me, once I got the hang of it, it became a cake walk. All that is required

Ingredients
  

  • 2 Egg yolks
  • 1/4 teaspoon Mustard powder
  • 1/2 teaspoon Sugar
  • pinch Salt - a
  • pinch Pepper powder - a
  • 1 tablespoon Lime juice Vinegar /

Instructions
 

  • Beat the egg yolks along with salt, pepper powder, mustard powder and sugar till well blended. Slowly drizzle the oil while beating. Do not pour all the oil at one go. When oil is drizzled into the mixture while beating it blends in. If you pour all at once the oil will remain separated. Keep drizzling the oil till all oil is used up. Add the lime juice/vinegar and mix well. Transfer to a container. Cover and refrigerate.

Note
If the mixture curdles, tip out the contents. Add a fresh egg yolk and seasoning. Start beating and then slowly drizzle the curdled mixture into it
