Nasi Goreng- Indonesian Fried Rice

As I mentioned in my previous post, Nasi Goreng has turned out to be one of the most frequently made dish at home. Not only is it flavourful to eat, but also easy to make as well. Serve it with a fried egg, some fried shallots, sambal, tomato and cucumber slices and we’re a happy lot.
I usually buy kaffir limes when it is available and store it in a zip lock bag and freeze them. It still imparts the flavour as if it were fresh. Shrimp paste has a very pungent smell and many may find it repelling. For those in such category, fish sauce is recommeded. You can adjust the usage of chilli, to suit your palate. If you don’t get Kecap Manis (Indonesian Sweet Soy Sauce), you can make it yourself. You can find the recipe here.
Ideally the rice used in the recipe should be cooked way ahead. This is to ensure that the rice is cooled and each grain is separate. The rice I used was Sona Masoori.

Nasi Goreng- Indonesian Fried Rice

An easy to make recipe of Nasi Goreng- Indonesian fried Rice

Ingredients
  

  • 1-1/2 cups Sona Masoori rice
  • 3 cups Water
  • 1 tablespoon Oil
  • 2 teaspoons Shrimp paste or 2 tablespoons Fish sauce
  • 2 tablespoons Finely chopped garlic
  • 2 Finely chopped Bird's eye chilli
  • 1 Finely chopped Green chilli
  • 2-3 Kaffir lime leaves
  • 1/4 cup Kecap Manis
  • 500 grams Cubed Boneless Chicken
  • to taste Salt

For the Garnish

  • 1 Fried egg
  • 2 tablespoons Chopped spring onion

Instructions
 

  • Rinse and drain the rice.
  • In a pressure cooker, add the rice and water. Cook on high heat. (2 whistles)
  • Switch off. Spread the cooked rice on a tray and let cool completely.
  • Fluff the rice using a fork so that each grain in separate.
  • You may omit the next step if you're not using shrimp paste.
  • Heat oil in a pan.
  • Add the shrimp paste and stir fry for a minute.
  • Remove from the oil and keep aside.
  • In the same oil, add garlic, chilli and kaffir limes and stir well.
  • Once the raw smell goes, add kecap manis.
  • Add the chicken ans stir till the chicken is cooked through.
  • Add the rice.
  • Add the roasted shrimp paste or fish sauce.
  • Add salt.
  • Mix well.
  • Transfer to a serving dish.
  • Garnish with fried egg and spring onion.
  • Serve with sliced cucumber and tomatoes.
