Trying to keep up to D’s request for “refreshing drinks”, I have been on the lookout for a drink that was different. This landed me on ‘Otai, a Polynesian drink, from Tonga. Ingredients
- 5 cups Watermelon chopped
- 1 cup Pineapple chunks (Optional)
- 1 - 3/4 cups Coconut Milk
- as required Sugar
- 1/2 lime Juice of
- as required Ice
Instructions
- Pulse the watermelon and pineapple in a blender till is just about crushed.
- As you require some texture in the drink, you needn't pulse finely.
- Add the lime juice, sugar and coconut milk into the watermelon mixture and mix well.
- Add ice.
- Serve chilled.
