Oven Baked Waffles

D’s college closed due to coronavirus. As all his friends left for their home towns, he too came home, albeit with a list of dishes I had to make for him. His first request was to make Waffles for breakfast.
Earlier, I used to make waffles like pan cakes, in a pan. Recently I bought silicone waffle moulds, so that one gets the feel of eating waffles, than pan cakes. The only drawback I found with the silicon mould is that they don’t turn crispy as the waffles made in the waffle iron. What I do is to toast it on butter in a pan, till it turns brown and slightly crispy. Though there are many options to serve, as long as my boy is happy with what he’s having, I’m satisfied 🙂 The recipe I have been following is from All recipes.

Ingredients
- 2 Eggs
- 2 cups All purpose flour
- 1-3/4 cups Milk
- 1/2 cup Vegetable oil
- 1 tablespoon Sugar
- 2 teaspoons Baking powder
- 1/4 teaspoon Salt
- 1/2 teaspoon Vanilla
Instructions
- Preheat the oven at 200C.
- Beat eggs in large bowl with until fluffy.
- Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla.
- Make sure it's a smooth batter with no lumps.
- Grease the waffle moulds.
- Pour the batter into the moulds.
- Bake for 10-15 minutes or till the edges turn brown.
- If you wish to crisp it more, toast it in some butter in a pan.
- Serve hot with accompaniments of your choice.
