Koottu is popular side dish of Tamil Nadu which is made of vegetable and lentils. Here is the recipe of Pudulangai-Kondai kadalai Koottu, which goes very well with Rice. You can use any vegetable in place of snake gourd and any lentil in place of Bengal gram.

Ingredients
  

  • 1 cup Snake gourd Diced
  • 1/4 teaspoon Turmeric powder
  • to taste Salt
  • 1/4 cup Bengal Gram Cooked

To be ground

  • 1/4 cup coconut Grated
  • 1 teaspoon Peppercorns (or less)
  • 1/2 teaspoon Cumin seeds

For tempering

  • 1/2 teaspoon Mustard seeds
  • 1 teaspoon black gram lentils Split (Urad Dal)
  • 1 sprig Curry leaves
  • 1 red chilli (broken into two) Dried

Instructions
 

  • Grind the coconut, peppercorns and cumin seeds with little water to form a slightly coarse paste.Keep aside.
  • Mix the snake gourd with salt and turmeric powder.
  • Cover and cook on low heat till it is cooked through.
  • Heat oil in a pan.Add the mustard seeds.
  • When they start to splutter, add the black gram lentils, curry leaves and dried red chilli.
  • Toss for a few seconds.
  • Add the cooked snake gourd and bengal gram and mix well.
  • Finally add the ground coconut paste, mix well and cook for a minute.
  • Switch off heat and transfer to a serving dish.
