Raspberry Coconut Cake

 

 
A couple of days back, my co-sister called me from UK to share the recipe of Raspberry Coconut Cake. She had tasted it at her friends’ place and liked it at the very first bite itself. She wasted no time in taking the recipe and sharing it with me. Seeing her enthusiasm, I set out with the brass-tasks at the very first opportunity.
While I was preparing the batter, D came in toinquireas usual. His first reaction was”Mama, I don’t like jam”, and my heart sank. But it was too late to reverse the decision and hence I went ahead. The story had a happy ending when my boys and D’s friends polished off the entire cake in one sitting…..I was wondering how happiness comes from the little things in life 🙂
 

Raspberry Coconut Cake

Ingredients
  

  • 4 Eggs
  • 1 - 1/2 cups Flour
  • 1 - 1/2 Teaspoons Baking powder (+1 pinch)
  • 1 - 1/2 cups Castor sugar
  • 1 - 1/2 cups Butter
  • 4 - 5 tablespoons Coconut Grated
  • 1 tablespoon Lime juice
  • 1 tablespoon Vanilla essence
  • 4 - 5 tablespoons Raspberry jam

Instructions
 

  • Preheat oven at 180C.
  • Sieve the flour along with baking powder and keep aside.
  • Cream butter and sugar in a bowl.
  • Add egg one at a time, followed by lime juice, vanilla and flour mixture.The batter will be thick and not runny.
  • In a greased tray sprinkle some coconut and pour the batter.
  • Drop half of the jam over the batter and sprinkle the remaining coconut.
  • Bake in the preheated oven for 40 min or till a toothpick inserted in the centre comes out clean.Let stand 10 mins.
  • Brush the remaining jam over the cake and serve.
