For the Garnish
  1. Rinse and drain the rice.
  2. In a pressure cooker, add the rice and water. Cook on high heat. (2 whistles)
  3. Switch off. Spread the cooked rice on a tray and let cool completely.
  4. Fluff the rice using a fork so that each grain in separate.
  5. You may omit the next step if you’re not using shrimp paste.
  6. Heat oil in a pan.
  7. Add the shrimp paste and stir fry for a minute.
  8. Remove from the oil and keep aside.
  9. In the same oil, add garlic, chilli and kaffir limes and stir well.
  10. Once the raw smell goes, add kecap manis.
  11. Add the chicken ans stir till the chicken is cooked through.
  12. Add the rice.
  13. Add the roasted shrimp paste or fish sauce.
  14. Add salt.
  15. Mix well.
  16. Transfer to a serving dish.
  17. Garnish with fried egg and spring onion.
  18. Serve with sliced cucumber and tomatoes.
