For the Malvani Masala
For the Coconut Masala

  1. Dry roast the Malwani Masala ingredients together till a nice aroma wafts and the spices turn a shade darker.
  2. Allow to cool completely.
  3. Grind the roasted masala to a smooth powder. Keep aside.
  4. Grind the ingredients meant for coconut masala to a smooth paste. Add water if necessary.
  5. Heat oil in a pan.
  6. Add the onion and coconut masala.
  7. Cook for 10 minutes, stirring occasionally.
  8. Tip in the powdered Malwani Masala.
  9. Fry for a minute.
  10. Add the chicken along with salt and 1/2 cup water.
  11. Mix well.
  12. Cover and cook till chicken is cooked through.
  13. If you need more gravy, you may add some hot water and bring the curry to a boil.
  14. Switch off heat.
  15. Garnish with grated coconut and coriander leaves.
  16. Serve hot.
