Semiya Paayasam aka Seviyan kheer (Vermicelli pudding)


  • 75 gms Vermicelli
  • 350 ml Milk (or more)
  • 200 - 250 gms Sweetened Condensed Milk
  • 1/4 cup Chopped dry fruits , ,
  • 2 tablespoons Clarified Butter /Ghee
  • 3 Cardamom (powdered or crushed)
  • a pinch Salt (optional)


  • Heat the ghee in a pan.
  • Toast the cashewnuts, almonds and pistachios till golden brown.
  • Drain and keep aside.
  • In the remaining ghee toast the vermicelli till it changes colour to golden brown.
  • Add the milk into it cook till the vermicelli is done.
  • Add the milkmaid and mix well.
  • When it starts to boil, add the crushed cardamom and give a stir.
  • If using salt, add it at the end and give a stir.
  • Switch off heat
  • Garnish with the toasted nuts.
  • Serve it warm or cold.
