Semiya Paayasam aka Seviyan kheer (Vermicelli pudding)
Ingredients
- 75 gms Vermicelli
- 350 ml Milk (or more)
- 200 - 250 gms Sweetened Condensed Milk
- 1/4 cup Chopped dry fruits , ,
- 2 tablespoons Clarified Butter /Ghee
- 3 Cardamom (powdered or crushed)
- a pinch Salt (optional)
Instructions
- Heat the ghee in a pan.
- Toast the cashewnuts, almonds and pistachios till golden brown.
- Drain and keep aside.
- In the remaining ghee toast the vermicelli till it changes colour to golden brown.
- Add the milk into it cook till the vermicelli is done.
- Add the milkmaid and mix well.
- When it starts to boil, add the crushed cardamom and give a stir.
- If using salt, add it at the end and give a stir.
- Switch off heat
- Garnish with the toasted nuts.
- Serve it warm or cold.
