Sukhiyan (Deep Fried Sweet Mung Bean Balls)

Ingredients
  

For the filling

  • 1 cup Green gram Mung beans /
  • 250 gms Jaggery
  • 1 cup Coconut Grated
  • 4 teaspoons Sugar
  • 1 teaspoon Ghee butter / Clarified
  • 2 pinches Salt
  • 1/2 teaspoon Ginger Dry powder (or as required)
  • 1/2 teaspoon Cumin powder (or as required)
  • 1/2 teaspoon Cardamom powder (or as required)

For the batter

  • 1/2 cup Flour
  • 4 tablespoons Water (or more)
  • as required Salt
  • 1 teaspoon Ghee (optional)

Instructions
 

  • Dry roast the green gram in a hot pan for a minute. Cook this gram with adequate water till done and the water is evaporated. Make sure that the gram is not overcooked.
  • Meanwhile place the jaggery with 1/4 cup water and bring to a boil. Simmer till the jaggery melts completely and forms a single thread consistency. Add the grated coconut into it and mix well. Add the cooked gram and stir for a minute. Add the sugar, salt, spices and ghee and mix well. Switch off once there is no more water content. Let cool for a minute or two. Once the heat is bearable roll into lemon sized balls and place on a plate.(You can use a tablespoon and divide into small portions and place on a plate as well when the mixture is hot. Once cool you can shape them into balls.).
  • In a separate bowl, mix the flour with water, salt and ghee to form a slightly thick batter.
  • Heat oil for deep frying. Dip each of the gram balls into the batter. Ensure that the ball is well coated with batter. Drop each balls into the hot oil. Fry till golden brown. Drain onto an absorbant paper. Serve hot.
