Thai Chicken Cakes

Savoury or sweet ? That’s the question I ask D before he heads to school. His choice helps me decide what to make as evening snack. This time he was a bit specific.”Mom, I want something made with chicken.” Later J comes up with another demand. “Make something light for dinner, maybe a salad.” All I had to do was look into my “To Try” list. Voila !! Thai Chicken Cakes!! Seemed to fit the bill. The cakes as snacks and some of it can be used in the salad. Kill two birds with one stone 🙂

D loved the cakes and ate to his heart’s content. I had saved a few cakes which I broke into pieces and added to chopped lettuce, carrots, cucumber and grated beetroot. Mixed it up and served as Dinner for J. It was indeed a pleasure to see those happy faces. 🙂
