Savoury or sweet ? That’s the question I ask D before he heads to school. His choice helps me decide what to make as evening snack. This time he was a bit specific.”Mom, I want something made with chicken.” Later J comes up with another demand. “Make something light for dinner, maybe a salad.” All I had to do was look into my “To Try” list. Voila !! Thai Chicken Cakes!! Seemed to fit the bill. The cakes as snacks and some of it can be used in the salad. Kill two birds with one stone ๐Ÿ™‚

D loved the cakes and ate to his heart’s content. I had saved a few cakes which I broke into pieces and added to chopped lettuce, carrots, cucumber and grated beetroot. Mixed it up and served as Dinner for J. It was indeed a pleasure to see those happy faces. ๐Ÿ™‚

Ingredients
  • 500 gms Chicken mince
  • 1 egg Beaten
  • 1/2 cup breadcrumbs Fresh
  • 1 tablespoon Fish sauce
  • 1 tablespoon Red curry paste
  • 2 tablespoons coriander Finely chopped root
  • 1 - 2 chilli Finely chopped
  • 4 spring onions Finely chopped
  • Oil for frying
  • wedges Iceberg lettuce lime chilli sauce and , sweet , to serve

  • 1 egg Beaten
  • 1/2 cup breadcrumbs Fresh
  • 1 tablespoon Fish sauce
  • 1 tablespoon Red curry paste
  • 2 tablespoons coriander Finely chopped root
  • 1 - 2 chilli Finely chopped
  • 4 spring onions Finely chopped
  • Oil for frying
  • wedges Iceberg lettuce lime chilli sauce and , sweet , to serve
Instructions
  1. Place the mince, egg, breadcrumbs, fish sauce, curry paste, coriander root, chilli and spring onion in a bowl and use your hands to combine.
  2. Using tablespoonfuls of mixture, shape into 24 small patties, pressing to flatten slightly. Transfer to a large baking tray and chill for 15 minutes.
  3. Heat oil in a frypan over medium-high heat. Cook the patties for 2 minutes each side or until cooked through.
  4. Serve cakes with the lettuce leaves, lime wedges and sweet chilli sauce.
