Though I have heard a lot about Jain food, I never tried making them at home. The other day, when one of my readers requested for such recipes, I decided to give it a try. Needless to say, the recipe was great. Simple to make, different yet tasty.

Vegetable Makhanwala (No Onion- No Garlic)

Ingredients
- 3 Tomatoes
- 3 Peppercorns
- 2 - 3 Cloves
- 10 Cinnamon (2 inch sticks)
- 2 - 3 Cardamoms Green
- 3 chillies Dried red
- 1/2 teaspoon methi Kasoori
- 2 tablespoons Tomato ketchup
- 2 teaspoons Cornflour
- 1/2 cup Coconut milk (I used thick)
- 2 tablespoons Cashewnut powder
- 3 tablespoons Butter
Instructions
- Boil water in a pan and immerse the tomatoes in it for one minute. Remove, de-skin and deseed tomatoes and chop finely. Keep aside.
- Heat the butter in a pan, add peppercorns, cloves, cinnamon, cardamoms, red chillies and dry fenugreek leaves. Add the chopped tomatoes and cook till mashed.
- Add the tomato sauce and boiled vegetables and mix well. Dissolve the cornflour in the coconut milk and add to the gravy.
- Add the xbd cup water and bring tc a boil. Add the salt and cashewnut powder. Cover and cook for 5 minutes.
- Serve hot garnished with the coriander.
