Idiyappam/ Noolputtu/ Sevai/ String Hoppers

Idiyappam also known as String hoppers, is a popular breakfast item in Kerala. While some people choose to have the sweetened version, some like it with spicy curries.   • 1 cup Rice flour Readymade Idiyappam
  • 1 - 1/2 cups Water
  • 2 pinches Salt
  • teaspoon Ghee 1/ Oil /

For the Sweet Idiyappams

  • 3 tablespoons coconut Grated
  • 3 tablespoons Sugar

For the Sweetened Coconut Milk

  • 1/2 cup Coconut Milk
  • 1/4 cup Water (Optional)
  • Sugar as per sweetness required


  • Mix the sugar and grated coconut together and keep aside.
  • Dissolve the sugar in the coconut milk and water and keep aside.
  • Put the rice flour in a bowl and make a well in the centre.
  • Take water in a pan. Add the salt and oil/ghee.
  • Bring the water to a rolling boil. Switch off heat.
  • Pour the boiling water into the well. Mix the flour with water well with a spatula or spoon till well blended and you get a soft dough.
  • Cover and keep aside. .
  • Meanwhile grease Idli trays with oil or ghee.
  • Take some dough and put into the press. .
  • Press the dough into the Idli trays in a circular motion so that it is evenly spread. If making the sweet version, sprinkle the sugar- coconut mixture on top as seen in the picture below. .
  • Steam cook for 10-15 minutes till all are cooked through.
  • Serve hot with sweetened coconut milk or any curry of your choice.
