Crispy Okra with Peanuts and Cashewnuts

  • 250 gms Okra Lady ' s finger / cut into small roundels
  • 1 onion Chopped
  • - 5 cloves garlic Crushed
  • 1 sprig Curry leaves
  • handful Peanuts - a
  • 1 tablespoon Cashewnuts
  • 3/4 teaspoon Chilli powder
  • 1/4 teaspoon Turmeric powder
  • 1/2 teaspoon mango powder Dry (amchoor powder)
  • to taste Salt


  • Roast the peanuts and cashewnuts and keep aside.
  • Heat oil in a pan. When hot, deep fry the okra roundls till crispy. Drain to an absorbent paper. Keep aside.
  • Take two tablespoons oil and put into another pan. Saute the onions till they wilt. Add the curry leaves and crushed garlic and saute for a minute.
  • Add the chilli, turmeric and dry mango powder and fry for a few seconds.
  • Add the okra, salt, peanuts and cashewnuts and toss well.
  • Switch off heat and serve hot.
