Marinate the chicken pieces with ginger- garlic paste, salt and pepper powder for at least 30 minutes.
Add the egg and corn flour and mix well.
Heat oil for deep frying.
Drop the chicken pieces in batches and fry till golden brown.
Drain onto an absorbent paper.Keep aside.
Heat another pan.Add 2 tablespooons of oil.
Add the ginger- garlic paste and saute till the raw smell goes.
Add the spring onion and saute for a few seconds.
Reduce heat and add the chilli powder.
Stir for a few seconds.
Add the soy sauce, sugar and tomato sauce.
Add the chicken pieces and cashewnuts and mix well till the chicken is well coated.
Switch off heat after a couple of minutes.
Check and adjust the seasoning.Serve hot.
