Olan (Ash Gourd and Cow peas cooked in Coconut Milk)
Olan is one of the must have dishes in any Kerala sadya (feast). It is a side dish comprising of chunks of ash gourd and cow peas cooked in coconut milk. Not only is it tasty but also easy to prepare as well. Olan can be prepared using Pumpkin instead of ash gourd or a combination of both.
- 1 - 1/2 cups Ash gourd Cubed
- 1/4 cup Peas Cow
- 3 - 4 green chillies slit
- 100 ml Coconut milk (thick)
- a few Curry leaves
- to taste Salt
- 1 teaspoon Coconut oil (optional) - ( I omitted this)
Cook the peas till just done. Make sure it is not squishy.
It should retain it's shape. Take a pan and put the chunks of ash gourd in it along with salt and green chillies.
Sprinkle a bit of water. Make sure not to add too much water, as the ash gourd has water content and will release its juices.
Cover and cook till the pieces are done but firm.
Add the cooked cow peas into the ash gourd and curry leaves along with coconut milk and mix well.
Cook on low heat for sometime. Switch off heat just before it comes to a boil.
If using coconut oil, drizzle over the top and serve.
