Goan Pork Ribs

Ingredients
  

  • 1 Pork rack ribs
  • 1/2 cup Water

To be Ground to a Paste

  • 15 chillies/Byadgi chillies Dried Kashmiri red
  • 1 teaspoon Cumin seeds
  • 2 Cinnamon sticks (1.5" each)
  • 6 Cloves
  • 8 Peppercorns
  • 4 cardamoms Green
  • 1 teaspoon Ginger paste
  • 1 teaspoon Garlic cloves paste
  • 1/2 teaspoon Turmeric powder powder
  • 1 teaspoon Sugar
  • to taste Salt
  • 1/2 cup Vinegar
  • 1 teaspoon Cornflour
  • 1 tablespoon Water

Instructions
 

  • Grind the ingredients mentioned above to a smooth, fine paste. Keep aside.
  • Wash and pat dry the ribs with a paper towel.
  • Apply the marinade all over and refrigerate for at least 2 hours or overnight. The more you marinate, the tastier it will be.
  • Heat a pot/ pressure cooker.
  • Place the marinated ribs along with 1/2 cup water into the pot.
  • Cover and cook on low heat till the ribs are tender.
  • Take the ribs and reserve the liquid.
  • Heat oil in a skillet or pan.
  • Place the ribs and cook on high heat till brown on both sides.
  • Transfer to the serving plate.
  • Mix cornflour and water.
  • Take the reserved liquid in a pan and bring to a boil.
  • Pour the cornflour mixture.
  • When the gravy thickens, switch off heat.
  • Pour over the ribs.
  • Serve hot with accompaniments of your choice.
