Paalaada (Fluffy Rice Crepes)

Last weekend, we had made a quick stop over at J's cousin's place while returning home from a wedding. We were served Paalaada, which I was tasting for the first time, even though I had heard about it. We took an instant liking for those fluffy crepes. Needless to say, I had already made up my mind

  • 1 cup Rice
  • 1 Egg Beaten
  • 3/4 cup Coconut milk
  • 1 - 1/2 cups Water
  • to taste Salt


  • Soak the rice for 2 hours.
  • Drain and grind to a smooth fine paste with coconut milk.
  • Add beaten egg, salt and water and mix well.
  • The consistency should be watery.
  • Heat a non stick pan.
  • When hot, pour a ladle of the batter and immendiately swirl the pan so that the batter forms an evenly thin round.
  • For first timers, it may take a couple of tries before you get the perfect thickness.
  • When the sides of the paalada comes off the pan, it is cooked.
  • Take it off the pan.
  • Fold it to desired shape.
  • Serve hot with a curry of your choice.
