Paalaada (Fluffy Rice Crepes)
Last weekend, we had made a quick stop over at J's cousin's place while returning home from a wedding. We were served Paalaada, which I was tasting for the first time, even though I had heard about it. We took an instant liking for those fluffy crepes. Needless to say, I had already made up my mind
- 1 cup Rice
- 1 Egg Beaten
- 3/4 cup Coconut milk
- 1 - 1/2 cups Water
- to taste Salt
Soak the rice for 2 hours.
Drain and grind to a smooth fine paste with coconut milk.
Add beaten egg, salt and water and mix well.
The consistency should be watery.
Heat a non stick pan.
When hot, pour a ladle of the batter and immendiately swirl the pan so that the batter forms an evenly thin round.
For first timers, it may take a couple of tries before you get the perfect thickness.
When the sides of the paalada comes off the pan, it is cooked.
Take it off the pan.
Fold it to desired shape.
Serve hot with a curry of your choice.
