Coconut Rice

Coconut rice is one of the easiest rice recipes. This is an ideal option for those looking for a variety in their rice dish. It is also a great way to use up your leftover rice and present it in a tastier way. :)


  • 2 cups Rice
  • 1 cup coconut Grated
  • 2 red chilli Dried - broken into pieces
  • 1 teaspoon Mustard
  • 1/2 teaspoon Cumin seeds
  • 1 tablespoon Bengal gram lentils
  • 1/2 tablespoon black gram Split (Urad dal)
  • 1 tablespoon Cashewnuts (Optional)
  • 1 sprig Curry leaves
  • 1 Green chillies


  • Cook the rice and keep aside.
  • Heat oil in a pan.
  • Add the mustard and cumin seeds.
  • When they start to splutter, add the bengal gram, black gram lentils, cashewnuts, red chilli and curry leaves.
  • Saute for a few seconds and add the green chilli and coconut.
  • Stir for a minute or two.
  • Add the cooked rice along with some salt and mix well.
  • Switch off heat after a minute.
  • Serve hot with a gravy of your choice.
