Coconut rice is one of the easiest rice recipes. This is an ideal option for those looking for a variety in their rice dish. It is also a great way to use up your leftover rice and present it in a tastier way. :)
- 2 cups Rice
- 1 cup coconut Grated
- 2 red chilli Dried - broken into pieces
- 1 teaspoon Mustard
- 1/2 teaspoon Cumin seeds
- 1 tablespoon Bengal gram lentils
- 1/2 tablespoon black gram Split (Urad dal)
- 1 tablespoon Cashewnuts (Optional)
- 1 sprig Curry leaves
- 1 Green chillies
Cook the rice and keep aside.
Heat oil in a pan.
Add the mustard and cumin seeds.
When they start to splutter, add the bengal gram, black gram lentils, cashewnuts, red chilli and curry leaves.
Saute for a few seconds and add the green chilli and coconut.
Stir for a minute or two.
Add the cooked rice along with some salt and mix well.
Switch off heat after a minute.
Serve hot with a gravy of your choice.
