Honey Financiers

What's the first thing that comes to your mind when you hear the word 'Financier'?? �Someone with more money than he can spend!! I�couldn't,�in my wildest of dreams, imagine that it could also mean something edible, except of course for a�cannibal. :-). Now that I have dug deep, let me shed some lig


  • 4 tablespoons Unsalted Butter (I used Amul butter)
  • 1/2 cup Sugar (powder the sugar)
  • 1/2 cup Almonds (Skinned) (finely ground)
  • 1/3 cup Flour
  • 1/8 teaspoon Salt (I omitted this as I used salted butter)
  • 3 Egg whites
  • 1/3 cup Honey


  • Preheat oven to 180C. Cut butter into pieces and heat them in a pan till it turns brown in colour. Make sure it doesn't burn.
  • Strain into a clean bowl and keep aside. Whisk flour, powdered sugar, almond powder and salt (if using) together.
  • Add egg whites and mix well. Gradually add the butter followed by honey to form a thick and smooth batter.
  • Pour into muffin moulds/pans. Bake for 12-16 minutes or till they are golden brown and are firm to the touch.
  • Let it cool completely before un-molding.
  • Enjoy with your hot cuppa :-).
