Rawa/Sooji Laddoos (Sweet Semolina Balls)
With the festival of lights right at the doorstep I was totally upbeat and in high spirits. What better way to welcome Diwali than to make some homemade desi sweets. The search for the sweet of my choice zeroed onto Semolina/Rawa/Sooji Laddoo, the recipe of which I found at 'Wining and Dining the In
- 1 - 1/2 cups Semolina
- 1/3 cup butter Ghee Clarified /
- 1 cup Sugar
- 1/2 cup Water
- 1/2 cup coconut Grated
- 1/2 teaspoon Cardamom powder
Mix sugar and water in a microwave dish. Stir well. Cover and keep aside. Put the butter and semolina in a microwave dish. Microwave on 'High' for 1 minute. Stir well. Reduce the power to 450 and cook for 8-10 minutes, till it turns aromatic, stirring in between. Take off the oven and keep aside. Take the grated coconut in another bowl and microwave on High for a minute. After stirring, bring down the power to 450 and cook further for 3-4 minutes. Take off and mix with the roasted semolina .
Place the bowl with sugar and water in the microwave and cook on High for 1 minute. Bring down the power to 300 and cook for 4-5 minutes. Add the roasted semolina mixture along with the raisins, cashew nuts and cardamom powder. Mix well and let it cool for a few minutes. Stir in between. Shape into small balls. You can decorate with nuts/ raisins if needed. Cool and store.
The time to cook might vary, depending on the make of your microwave oven. I would recommend you to cook for a lesser time, check and then cook again if required
