Usually I like to laze around and take it easy on Sundays and Holidays. But today was an exception.... Why so??? 'Cos I was back on my feet after a bout of viral fever. Moreover, I was feeling lonely, as J was out of station and D was having a sleepover at his friend's place. So what do you do then
For the Sandesh
- 200 gms Cottage Cheese Fresh (Paneer)
- 4 - 5 tablespoons sugar Powdered
- 2 - 1/2 tablespoons Milk
- a few drops Rose or Kewra essence
For the filling
- 2 apple Grated
- 1/2 teaspoon Lime juice
- 6 - 8 teaspoons Sugar
- a few Saffron (soaked in 2 tablespoons hot water) stands
Put the grated apple, sugar, lime juice and soaked saffron into a pan .Cook on low heat till the apple is done and the mixture turns slightly dry.Switch off heat and let it cool.
Take the Cottage Cheesein a bowl and mash finely.Add the powdered sugar, milk and essence and mix very well.
Do a taste test to make sure it is sweet enough.Add more sugar if needed.Take off a small ball and flatten it.
Take a spoonful of apple filling and place in the centre.Carefully cover the apple mixture and shape it as desired.
