Cornflakes Chocolate Macaroons

Last Sunday, I was really in the mood to laze around a bit and that was when D came with the request to make Chocolate Coconut Macaroon Truffles, which he saw in a magazine he was browsing. Before I could give out my excuse he volunteered to help me with it. With all mydefensesdown, I reluctantly ag


  • 2 - 2 - 1/2 cups cornflakes Crushed
  • 1/3 cup Dark chocolate Chopped
  • 4 Egg whites
  • 1 - 1/2 cups Sugar
  • 1/4 teaspoon Salt
  • 1 - 2 tablespoons Milk
  • 3 tablespoons Flour
  • 3 tablespoons Cocoa powder
  • 1/2 teaspoon Vanilla essence


  • Preheat oven to 175C .
  • In a heavy saucepan, combine egg whites, sugar and salt. Heat over medium flame, stirringcontinuouslyuntil it is just warm to touch. Add the flour, cocoa powder, vanilla, milk and cornflakes. Continue stirring for 4 minutes or till gently sizzling.
  • Remove from heat, add the chocolate and mix well till the entire chocolate is melted and blended. Using a spoon or scoop place balls on parchment paper spaced 1" apart.
  • Bake for 15 minutes or till they set and turn crisp around the edges.
  • Let it cool completely. The macaroons tasted better after a couple of hours.
