Avial (Mixed vegetables with ground coconut)
Avial is an essential dish of any Vegetarian feast. Avial is a mixture of vegetables cooked with ground coconut. The typical avial consists of Yam, Brinjal, Drumsticks, Plantain, Long beans, Ash Gourd and Snake gourd. Nowadays we can find that carrots, potatoes and french beans are also used. Raw ma
- 1 Brinjal
- 250 gms Yam (Chena)
- 2 Drumsticks
- 100 gms beans Long (Achinga)
- 250 gms Snake Gourd (Padavalanga)
- 500 gms Cucumber (Vellarikka)
- 1 tablespoon Coconut Sunflower oil (I used refined oil)
- to taste Salt
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Chilli powder
- Coconut Grated (of 1 coconut)
- 100 gms mango Raw (I used sour Curd)
- 50 gms Green chillies
- 1 teaspoon Cumin seeds
- 1 tablespoon Coconut oil
- 2 sprigs Curry leaves
Slice all the vegetables to 1" length pieces.
Keep the raw mango(if using)pieces aside.
Cook all the vegatbles except Mango with 1 tablespoon oil, salt, turmeric powder and chilli powder on low heat till all vegetables are cooked.
You don't have to add water as most of the vegetable release the water.
(If you are using other vegetables which has less water content, you can add water).
If using mangoes or curd, add it now and let cook till it is done.
Coarsely grind the coconut along with chillies and cumin seeds. It is recommended to grind cumin seeds separately as it needs to be finely ground.
Mix the coconut mixture along with cumin paste into the vegetables and toss. Try not to use a ladle or spoon so that the vegetables don't turn mushy.
Finally add the coconut oil and curry leaves and toss well to make sure they are well blended.
Serve with Rice.
