Beetroot Pachadi (Grated beetroot cooked with ground coconut and curd)
Pachadi is a traditional side dish of South India similar to the North Indian Raita. - 1 Beetroot Grated
- 1/4 teaspoon Turmeric powder
- to taste Salt
- 1 cup Curd Beaten
To be ground to a fine paste
- 1/2 cup Coconut Grated
- 1/4 teaspoon Mustard seeds
- 1/4 teaspoon Cumin seeds
- 2 Shallots sliced
- a few Curry leaves
- 1/2 teaspoon Mustard seeds
Grind the coconut with mustard seeds, chillies and cumin seeds to a fine paste and keep aside..
Heat a pan and add grated beetroot, salt and turmeric and mix well. Cover and cook till beetroot is done.
Add the ground coconut and mix well. Let cook till the water dries off.
Add the curd and mix well. When it starts to boil switch off heat.
Heat oil in another pan.
Add mustard seeds. When they start to splutter, add sliced shallots and curry leaves.
Saute till the shallots turns brown in colour.
Pour this over the Pachadi and mix well.
Serve with Rice.
