Beetroot Pachadi (Grated beetroot cooked with ground coconut and curd)

Ingredients
  

  • 1 Beetroot Grated
  • 1/4 teaspoon Turmeric powder
  • to taste Salt
  • 1 cup Curd Beaten

To be ground to a fine paste

  • 1/2 cup Coconut Grated
  • 1/4 teaspoon Mustard seeds
  • 1/4 teaspoon Cumin seeds

For Tempering

  • 2 Shallots sliced
  • a few Curry leaves
  • 1/2 teaspoon Mustard seeds

Instructions
 

  • Grind the coconut with mustard seeds, chillies and cumin seeds to a fine paste and keep aside..
  • Heat a pan and add grated beetroot, salt and turmeric and mix well. Cover and cook till beetroot is done.
  • Add the ground coconut and mix well. Let cook till the water dries off.
  • Add the curd and mix well. When it starts to boil switch off heat.
  • Heat oil in another pan.
  • Add mustard seeds. When they start to splutter, add sliced shallots and curry leaves.
  • Saute till the shallots turns brown in colour.
  • Pour this over the Pachadi and mix well.
  • Serve with Rice.
